Recipe Ingredients for Minestrone

1 T Olive Oil
1 medium onion
3 cloves garlic
2 stalks celery
2 c carrots
1 c mushrooms
32 oz. fat free chicken broth
28 oz. diced tomatoes
15 1/2 oz garbanzo beans
14 1/2 oz green beans
1 c whole wheat spaghetti

Recipe Directions for Minestrone

Heat onions and garlic in olive oil till translucents. Add chicken broth, tomatoes, both cans of beans with juice. Heat to boiling. Add pasta (if desired). Cook till pasta is tender, 8 - 10 minutes.
