From Mollie Katzen's Soup Recipes, p. 13 - Add 3 cups vegetable broth to this (or use 3 cups water) - I've not included it as Calorie Count does not have the kind I use, which is Trader Joe's.

Recipe Ingredients for Minestrone

2 tbsp olive oil
2 cups onion, chopped
5 garlic cloves, minced
1 1/2 tsp salt
1 carrot, diced
1 bell pepper, diced
3 cups water
14 1/2 oz diced tomatoes
30 oz kidney beans
1 zucchini, diced
1 tsp oregano
1/4 tsp black pepper
1 tsp basil
5 oz whole wheat pasta
3 tomatoes, diced

Recipe Directions for Minestrone

  1. Heat the olive oil in a kettle. Add onion, garlic, and salt. Saute over medium heat for about 5 minutes, then add carrot, oregano, black pepper, and basil. Cover and cook over very low heat about 10 more minutes, stirring occasionally.

  2. Add bell pepper, zucchini, water/broth, and tomatoes (pureed). Cover and simmer about 15 minutes. Add beans (rinsed and drained) and simmer another 5 minutes.

  3. Bring the soup to a gentle boil. Add pasta, stir, and cook until the pasta is tender. Stir in the diced fresh tomatoes, and serve right away, topped with parmesan.
