Recipe Ingredients for Minestrone

2 tsp canola oil
3 oz canadian bacon, chopped
1 onion, chopped
4 garlic cloves, minced
2 carrots, chopped
1 celery stalk, chopped
1 tbsp dried oregano
1/2 tsp red pepper flakes
1/4 tsp salt
1/4 tsp black pepper
28 oz tomatoes, crushed
6 cups chicken broth
10 oz baby spinach
19 oz kidney beans
19 oz chickpeas
8 oz pasta, whole wheat

Recipe Directions for Minestrone

  1. cook bacon in oil over medium-high heat for about 10 minutes.

  2. reduce heat to medium and add onion, garlic, carrots,celery,oregano, red pepper flakes, salt, & pepper. Cook until the veggies are soft (about 10mins.)

  3. add tomatoes and broth -- bring to a boil. Reduce heat to a simmer & add spinach, beans, chickpeas, & pasta. Simmer until pasta is tender (about 20mins.)
