Add 1/2 Cup of small pasta of your choice to this soup.

Recipe Ingredients for minestrone

2 carrots, chopped
3/4 c cabbage, chopped
1 celery stalk, chopped
1 red onion, diced
1 clove garlic, minced
2 tsp extra virgin olive oil
14 1/2 ounce stewed tomatoes, diced
14 1/2 ounce vegetable broth
1/4 tsp pepper
1 tbs italian seasoning

Recipe Directions for minestrone

Saute veggies in olive oil. Add all other ingredients. Cook for about 30 minutes.
