Recipe Ingredients for Minestrone Parade

3 cup Cannellini Beans
4 cup Natural Goodness Chicken Broth
305 grams Onions
2 cup, chopped Carrots
240 grams Squash, Summer, Zucchini, Includes Skin
143 grams Celery
654 grams Potato, Flesh And Skin
225 grams Tomatoes, Red, Ripe
4 serving Extra Virgin Olive Oil
2 cup (8 fl oz) Water
3 cup Spinach

Recipe Directions for Minestrone Parade

In a large pot, heat 1/4 cup olive oil over medium heat. Add onion, carrot, and celery. Sprinkle with salt and pepper to taste. Cook, stirring often for 10-15 minutes or until vegetables begin to soften and darken around the edges. Add potatoes, sprinkle with salt and pepper. Cook, stirring occasionally, for 10-15 minutes or until vegetables are nicely browned. Add 4 cups chicken broth and 2 cups water, stirring to scrape up any brown bits from bottom of pot. Add tomatoes, bring to a boil, and then lower heat to a simmer. Cook, stirring occasionally, for about 15 minutes. Add zucchini and spinach, raising heat if necessary to keep mixture at a steady bubble. Cook vegetables until very tender, another 10-15 minutes. Stir in beans.Cook for 3-4 minutes. Add salt and pepper, if needed. Top with Parmesan cheese if desired.
