278 g onion, raw
300 g carrots, raw
382 g zucchini, raw
181 g green beans, raw
115 g tomatoes, raw
143 g celery, raw
254 g potatoes, raw
1 tbsp extra virgin olive oil
1/8 cup salt, coarse
14 cups water

Recipe Directions for Minestrone January 18th 2010

  1. Cut all vegetables

  2. Put onion, carrots and celery in the pot with the oil.

  3. Cook until onion is translucent

  4. Add the other vegetables

  5. Add 12 cups of boiling water with the salt

  6. Simmer for 2 1/2 hours

  7. Towards last 30 minutes add 2 more cups of boiling water
