Recipe Ingredients for minestrone w/ chickpeas

200 g tomatoes
120 g red pepper
150 g onion
1 tsp garlic
60 g carrots
240 g chickpeas
160 g red beans
3 cups chicken stock
50 g pasta, wholemeal
1 tbsp olive oil

Recipe Directions for minestrone w/ chickpeas

  1. lightly fry onion, pepper and garlick with olive oil

  2. add chopped tomatoes, carrots and beans

  3. add stock, season, add herbs to taste

  4. cook for 15 m and then add pasta

  5. carry on cooking until pasta is done
