Rachel Ray's recipe for beans & greens

Recipe Ingredients for Minestra

1 tbs Olive Oil
1 onion
3 cloves garlic
5 c vegetable broth
8 oz Crimini mushrooms, quartered
3 c Kale
15 oz white beans
6 oz macaroni
1 serrano pepper
1 black pepper

Recipe Directions for Minestra

  1. Saute onion and garlic in olive oil. Add vegetable broth and bring to a boil.

  2. Chop kale and add to broth.

  3. Add pasta and cook until pasta is al dente.

  4. Add 1 can white beans and serrano pepper and simmer for 10 minutes

  5. Season with black pepper
