Recipe Ingredients for Minestoni

2 1/2 cup, chopped Onions
150 grams Carrots
2 stalk, large (11"-12" long) Celery
3 Potato large (3" to 4-1/4" dia) Potato, Flesh And Skin
28 oz Diced Tomatoes
3 1/2 cup Cannellini Beans
113 grams, Ditalini Pasta
420 grams, chopped Collard Greens
32 fl oz Organic Low Sodium Chicken Broth
1 tbsp Olive Oil, Extra Virgin
1/4 cup Parsley
1/4 tsp Oregano
1 tsp, ground Basil, Dried
1 large Squash, Summer, Zucchini, Includes Skin
1 tsp Pepper, Black
1/2 tsp Salt
4 cloves, Garlic

Recipe Directions for Minestoni

  1. Heat oil in large pot over medium heat. Add onion, carrot and celery. Cook, stirring often, until vegetables begin to soften. Add garlic and stir for 30 seconds to 1 minute being careful not to burn garlic.

  2. Add potatoes and zucchini. Cook until vegetables begin to brown.

  3. Add stock, 4 cups of water and tomatoes. Stir to release any fond from the bottom of pot. Bring to boil, then reduce to simmer for 15 minutes.

  4. Add pasta and simmer for an additional 5 minutes.

  5. Add beans and greens. Cook until vegetables are tender and greens have wilted.
