Recipe Ingredients for Mindalynn's spinach artichoke dip

8 oz spinach
6 pieces artichoke hearts, canned
63 g laughing cow light swiss
1/3 cup parmesan cheese
2 T light mayonnaise
6 oz fat free sour cream
2 cloves garlic
1 T olive oil
2 T shallot

Recipe Directions for Mindalynn's spinach artichoke dip

  1. Sautee garlic and shallot (minced) in olive oil. Add spinach and cook until wilted. Add chopped artichoke hearts, and cook for a few mintues.

  2. Add remaining ingredients. Stir, then process in food processor.

  3. Bake at 350 in a 8X8 pan for about 20 minutes.
