Makes enough for 4 x 600ml lunches. Keeps well for up to 24 hours.

Recipe Ingredients for Minced Chicken and Cabbage Salad

2 cups cabbage, finely shredded
1 carrot, small grated
2 tbsp light olive oil
1 onion, finely chopped
250 g chicken, finely mince
2 tbsp teriyaki sauce or oyster sauce
2 tsp honey
1/4 cup water
100 g egg noodles, boiled until tender

Recipe Directions for Minced Chicken and Cabbage Salad

  1. Mix cabbage with carrot in a bowl.

  2. Heat oil in a frying pan and add onion.

  3. Cool 1 minute then add chicken and fry, stirring until crumbly (3 to 4 minutes)

  4. Add teriyaki or oyster sauce, honey and water and heat for 1 minute.

  5. Mix into cabbage while hot, add noodles and stir well.

  6. Let cool completely and refrigerate until required.

  7. Cabbage will wilt but has even more flavour.
