From the cookbook "Better Homes and Gardens Vegetarian Recipes Cooking for Today". These spunky little egg casseroles are baked in muffin cups. They can be served with salsa and sour cream (not in calorie count). They are great breakfast or brunch food, and they reheat really well in the microwave.

Recipe Ingredients for Minature Mexican Frittatas

10 ounce frozen chopped spinach, thawed and well drained
1 cup cottage cheese, drained
1/2 cup grated Parmesan cheese
1/2 cup (2-ounces) cheddar cheese, shredded
4 eggs
1/4 cup milk
1 teaspoon ground cumin
1/4 teaspoon pepper, freshly cracked is best
2 tablespoons cilantro or parsley, snipped

Recipe Directions for Minature Mexican Frittatas

  1. Preheat oven to 375 degrees.

  2. In a large bowl combine the spinach, cottage cheese, Parmesan cheese and cheddar cheese.

  3. In another bowl, stir together the eggs, milk, cumin, and pepper.

  4. Stir the egg mixture into the spinach and cheese mixture. Add the cilantro or parsley.

  5. Lightly grease 2.5 inch muffin pan(s) (12 muffin cups total). Spoon egg, spinach and cheese mixture into 12 greased muffin cups.

  6. Bake uncovered for 20-25 minutes or till eggs are set.

  7. Let stand 5 minutes. Remove from muffin cups. If desired, serve with salsa and/or sour cream. (For fun finger food at a party, use mini muffin tins instead for a bite sized version.)
