Enough soup for a cleansing weekend. Have one cup every 3 hours until Sunday dinner when the fast is broken. For dinner, have 4-6 oz fish or meat, two steamed vegetables with a dash of butter or olive oil, and 1 piece of fruit.

Recipe Ingredients for Mimosa Soup

1 head lettuce
1/2 lb carrots
1/2 lb celeriac
1/2 lb turnips
1 lb leeks
1/2 lb cauliflower
1/2 c parsley, chopped
2 eggs, hard-boiled, and chopped

Recipe Directions for Mimosa Soup

  1. Clean and chop all the vegetables in rough pieces and put them in a pot, except for the cauliflower and parsley. Cover with water, bring to boil, and simmer, uncovered, for 40 minutes. Add the cauliflower and cook for another 15 minutes.

  2. Pass all the cooked vegetables through a food mill.

  3. Serve the soup in a bowl and add parsley and pieces of chopped hard-boiled eggs.
