Recipe Ingredients for Mimosa Cupcake

2 3/4 cups all-purpose flour
3 tsp. baking powder
1 tsp. salt
2/3 cup unsalted butter
1 1/2 cups white sugar
2 eggs
6 oz champagne
1/2 cup orange juice
1 orange, zest
1 1/2 cups unsalted butter, softened
1 1/2 cups cream cheese, softened
3 cups powdered sugar, sifted
2 teaspoons orange juice
1 oz champagne
1 pinch of orange zest

Recipe Directions for Mimosa Cupcake

  1. For the cupcake

  2. Preheat oven to 350 F

  3. Add one egg at a time

  4. Sift together flour, baking powder, and salt in a seperate bowl

  5. Add orange zest, orange juice, and champagne

  6. Add dry ingredients, mix until just combined

  7. Fill liner 2/3 full and bake for 20-25 minutes

  8. For the Frosting

  9. Cream butter and cream cheese until combined and fluffy

  10. Add powdered sugar, 1/2 a cup at a time, to taste

  11. Add orange juice, zest and champagne

  12. Mix until combined

  13. Frost the cooled cupcakes
