Low fat version of Mimmi's famous summer squash casserole

Recipe Ingredients for Mimmi's squash casserole (low cal.)

3 cup, sliced Squash, Summer, Crookneck And Straightneck
1 tbsp Olive Oil
1 large Onions
1 large Egg, Whole
4 oz Fat Free Yogurt Plain
1/2 cup Cheeses, Low Fat Mozzarella

Recipe Directions for Mimmi's squash casserole (low cal.)

  1. Steam squash, mash when soft

  2. beat egg

  3. dice onion, carmelize in olive oil (can also use onions raw if desired)

  4. mix all ingredients together, season to taste, place in Pam-sprayed small casserole dish

  5. bake 30-40 minutes
