Makes 12 servings



a lower calorie (but still not very low) version of this bread (I've omitted 1/2 cup of walnuts, which can be added during the final mixing of the batter). The walnuts are not included in the nutritional information.

Recipe Ingredients for Mimi's Restaurant-style Carrot Raisin Bread

1 1/3 cups whole wheat flour
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
3/4 cup brown sugar, firmly packed
3/4 cup Eggbeaters
3/4 cup canned crushed pineapple, drained
26 g raisins (50 raisins)
1 1/4 cups carrots, finely shredded

Recipe Directions for Mimi's Restaurant-style Carrot Raisin Bread

  1. Sift together first 5 ingredients (flour, soda, powder, cinnamon & salt) into a mixing bowl.

  2. Whisk together oil, egg substitute and sugar in separate bowl.

  3. Stir the liquid mixture into the flour mixture; mix well.

  4. Add the next three ingredients (pineapple, raisins & carrots), stir again.

  5. Makes 12-18 muffins which take about 25 minutes at 350 degrees.

  6. OR

  7. Grease & flour a 9" square pan or 4 mini-loaf pans. Fill the pan about 2/3 full with batter. It will not rise much while cooking.

  8. Bake at 350 for about 40 minutes. Mini-loaves take about 30 minutes.

  9. Makes 8-12 servings (nutritional information is based on 12 servings).
