Recipe Ingredients for Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

2 eggs
1/2 cup plain yogurt
1/4 cup applesauce
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 bananas
1/2 cup rolled oats
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 tablespoon ground cinnamon
1/4 tsp nutmeg
1 cup strawberries

Recipe Directions for Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

  1. Preheat the oven to 375 F (190C). Grease 12 large muffin cups or line with paper liners.

  2. In a large bowl, whisk together the eggs, yogurt, applesauce, brown sugar, vanilla and bananas. Combine the flour, soda, salt, spices. Fold dry ingredients into the banan mixture until moistened. Don't overmix as this can make the muffin tough. Fold in the strawberries until evenly distributed. Spoon batter into muffin cups until compeltely filled.

  3. Bake for 20 minutes in the preheated oven or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.
