Recipe Ingredients for MiMi's Enchilada soup

5 lbs. Velveeta cheese
3/4 gallons of chicken broth
12 ounces of salsa
12 ounces of salsa verde mild
8 bouillon cubes
7 cloves of chopped garlic
3 cups diced carrots
4 lbs. cooked chicken
2 cups celery
2 cups onion
2 lb. frozen corn
3/4 cup chili powder
1 cup of cheddar cheese
1 cup of lime juice
3/4 cup of cumin
12 ounces of beer

Recipe Directions for MiMi's Enchilada soup

  1. In huge stock pot Cook chicken

  2. steam vegetables in separate pan with a tablespoon of kosher salt

  3. remove chickens when cooked

  4. de-fat the broth

  5. remove chicken from bone and return to the pot

  6. add vegetable back to stock pot

  7. slowly add all the cheeses while stilling on low heat

  8. add spices

  9. simmer and stir untill all cheese are melted into broth

  10. add corn
