1/4 cup flax seed meal
1 whole egg (large or jumbo is best)
1 tsp baking powder
2 tbsp cinnamon
2 tbsp Splenda or 2 drops of liquid Splenda
1/16 tsp salt
1/8 tsp vanilla
2 tbsp heavy cream

  1. Use a 12-oz coffee cup for this treat.

  2. put all ingredients into the coffee cup and stir for 2 1/2 minutes.

  3. Put in microwave and cook on high for 1 minute

  4. Add 30 seconds if you'd like your muffin a little drier.
