Recipe Ingredients for Millet with Spinach and Pine Nuts

1 cup millet
1/3 c dried apricots, roughly chopped
4 c chicken stock
4 tbsp pine nuts
10 oz spinach leaves
3 tbsp lemon juice

Recipe Directions for Millet with Spinach and Pine Nuts

  1. Put the millet and apricots into a large saucepan and stir in the stock over high heat and bring to a boil. Reduce the heat and simmer until all the stock is absorbed and the millet is tender, 15-20 minutes.

  2. Meanwhile, toast the pine nuts in a small, dry skillet until they are golden brown and fragrant; set aside.

  3. Add the spinach and lemon juice to the millet with salt and pepper to taste. Cover the pan and leave over a very low heat until the spinach wilts, 4-5 minutes.

  4. Stir the millet and spinach mixture gently, then spoon into a serving bowl. Scatter the toasted pine nuts on top.
