Started out as a sort of banana bread.. then went in a whole new direction.

Recipe Ingredients for Millet, Rice & Buckwheat Muffins

1/2 cup millet flour
1/2 cup brown rice flour
1 cup buckwheat flour
3 small bananas
1 1/2 tsp vanilla extract
1/4 cup turbinado sugar
3/4 cup Soymilk Plain
40 g Agave Nectar
75 g Almondmilk
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
1 1/2 tbs coconut oil

Recipe Directions for Millet, Rice & Buckwheat Muffins

  1. Preheat oven to 350

  2. combine dry ingredients

  3. combine wet ingredients

  4. add wet to dry (careful not to over stir)

  5. bake until tops are browned and bounce back.
