Not too sweet, breakfast muffin. Great warm with butter.

Recipe Ingredients for Millet Muffins

2 1/4 cups whole wheat flour
1/3 cup millet
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
1 egg, lightly beaten
1/2 cup vegetable oil
1/2 cup honey

Recipe Directions for Millet Muffins

  1. Preheat oven to 400 degrees. Grease muffin cups.

  2. In a large bowl, mix the whole wheat flour, millet, baking powder, baking soda & salt.

  3. In a separate bowl, mix the buttermilk, egg, vegetable oil, and honey.

  4. Stir buttermilk mixture into the flour mixture just until evenly moist.

  5. Transfer batter to the prepared muffin cups, only fill halfway to allow for rising.

  6. Bake 15 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean.
