Healthy replacement for traditional mashed potatoes.

Recipe Ingredients for Millet mash

2 medium potatoes
1/2 cup millet, dry
12 oz. cauliflower
1/2 cup low fat sour cream

Recipe Directions for Millet mash

  1. Cook millet according to package instructions. Microwave potatoes until done. Microwave/steam cauliflower.

  2. Cut potatoes into fourths and place in large bowl. Add cauliflower, millet and sour cream. Whip with hand beater until smooth and creamy. Pepper to taste.
