Recipe Ingredients for Milk Kefir Raspberry Muffins

430 ml (1 3/4 cups) unbleached all-purpose flour
150 ml (2/3 cup) brown sugar
15 ml (1 tablespoon) baking powder
1 pinch salt
250 ml (1 cup) plain kefir or yogurt
60 ml (1/4 cup) vegetable oil
60 ml (1/4 cup) All-Bran cereal
1 egg, lightly beaten
375 ml (1 1/2 cups) fresh or frozen raspberries
30 ml (2 tablespoons) sugar

Recipe Directions for Milk Kefir Raspberry Muffins

  1. 1. With the rack in the middle position, preheat the oven to 190C (375F). Line 12 muffin cups with paper liners.

  2. 2. In a large bowl, combine the flour, brown sugar, baking powder and salt. Set aside.

  3. 3. In another bowl, combine the kefir, oil, cereal and egg. Pour the mixture on the dry ingredients and gently stir with a spatula, mixing only until the flour is moistened.

  4. 4. Add the raspberries and stir gently.

  5. 5. Scrape the batter into the muffin cups. Sprinkle with sugar. Bake until a toothpick inserted in the centre comes out clean, 20 to 25 minutes. Unmould the muffins and cool on a rack.
