Indian chicken curry with carrots and peas.

Recipe Ingredients for Mild Chicken Curry

15 oz lite coconut milk
10 skinless chicken drumsticks
4 carrots, sliced thin on an angle
3/4 cup peas
8 tbsp curry powder
3 tbsp cinnamon
15 oz rotel tomatoes
1 onion
1 tbsp garlic
6 oz plain yogurt

Recipe Directions for Mild Chicken Curry

  1. Brown chicken in separate skillet.

  2. Saute onions and garlic until tender. Add spices and mix well.

  3. Add coconut milk and rotel tomatoes.

  4. add chicken pieces and add enough water to cover chicken.

  5. bring to boil and cook 20 minutes

  6. Remove chicken and pull meat off the bones.

  7. Add chicken meat, carrots, peas and yogurt and simmer until carrot are tender

  8. Serve with rice.
