A Mild Bean Burrito - GREAT FOR MAKING AHEAD AND FREEZING

Recipe Ingredients for Mild Bean Burritto - Wheat Free

12 wonton wrappers (rice wrappers, round ones work best)
3 tbsp basil
2/3 cup chopped tomatoes
6 oz gouda cheese
1/3 cup navy beans
1/3 cup kidney beans
1/3 cup black beans

Recipe Directions for Mild Bean Burritto - Wheat Free

  1. Soak beans overnight in 2 cups of water. Cook in a crockpot with another cup of water until beans have softened to your liking.

  2. Soak wonton wrappers in a shallow dish of water. When they have softened, take 2 and place them together on a flat surface. In the center top with 1/3 cup of the bean mixture, 1/2 tbsp basil, 1/8 cup tomatoes and 1 oz gouda cheese. Wrap up burrito. Refrigerate or freeze until ready to use.

  3. Either bake at 350 for 20 minutes or until wrapper begins to brown.

  4. Or Microwave for 3 minutes.

  5. Serve hot with tobasco, salt and pepper to taste.
