This is a hearty stew. You could use beef or chicken instead of veal.

Recipe Ingredients for Milanese Veal Stew

1/2 c. flour
3/4 tsp. pepper
2 1/2 lbs veal, cut into 1-inch cubes
1 tbsp olive oil
1 c. white wine
2 c. leeks, white & light green parts, chopped
3 c. chicken stock
1 c. celery, chopped
1/2 c. carrots, chopped
4 cloves garlic, minced
28 oz diced tomatoes
2 tsp Italian herb seasoning
1/4 c. fresh basil, chopped
2 tsp dried thyme
1/4 c. chopped fresh parsley
1 tsp. finely grated lemon rind
2 tbsp lemon juice
1 tsp salt

Recipe Directions for Milanese Veal Stew

  1. In plastic bag, toss flour with pepper. Add veal, in batches, and shake to coat.

  2. In large Dutch oven, heat oil over high heat, brown veal about 5 minutes. With slotted spoon, transfer to bowl.

  3. Drain any fat from pan; add wine and cook, scraping any brown bits from bottom of pan, until reduced by half, about 4 minutes.

  4. Stir in chicken stock; cook for 5 minutes.

  5. Return veal and any accumulated juices to pan. Stir in celery, carrots, garlic leeks, onions, tomatoes, Italian herb seasoning, basil and thyme.

  6. Cover and cook over medium-low heat, stirring occassionally, about 1 hour.

  7. Stir in parsley, lemon rind, lemon juice and salt.
