Recipe Ingredients for MIkey's Scaloppine in Lemon Sauce

1 pound chicken breasts, sliced
1/4 tsp salt
1/2 stick unsalted butter
1 tbs olive oil
1/4 cup flour
2 cloves garlic, minced
29 g (1/2) lemon, sliced thin
15 g (1/4 cup)green olives, pitted & sliced
2 tbs capers
1/2 cup white wine
2 tbs lemon juice
1 tbs parsley, chopped

Recipe Directions for MIkey's Scaloppine in Lemon Sauce

  1. Pound meat between 2 pieces of wax paper to 1/4 inch thickness. Season with salt.

  2. Melt 2 tbs butter with olive oil in a large skillet. Spread flour on a plate. Dredge meat in flour. Place on skillet. Cook until edges are caramelized, 1-2 mins.. Turn over and cook other side Repeat until all pieces cooked. Remove and put on side.

  3. Increase heat to high. Add garlic & lemon slices to pan. Caramelize both sides of lemon. Add olives and capers, let sizzle for 1-2 mins. Add wine and lemon juice. Heat sauce to a boil. Add 1/2 cup water. Boil sauce until reduced by half. Whisk in remaining butter.

  4. Reduce heat to a simmer. Return meat slices to pan. Simmer for 5 minutes or until warm throughout.
