Recipe Ingredients for Mikey's Lasagna

1 lb. LEAN GROUND TURKEY
4 tbsp parsley
16 oz. lasagna noodles (16 noodles)
30 oz. low-fat ricotta cheese
3 cups mozzarella cheese
6 cups marinara sauce
1 cup grated parmesan cheese
24 oz. LOW-FAT COTTAGE CHEESE
1 EGG

Recipe Directions for Mikey's Lasagna

  1. 1.In a large pan, cook ground turkey over medium heat until well browned. Stir in marinara sauce and water. Simmer for about a half hour.

  2. 2.Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water.

  3. 3.In a mixing bowl combine ricotta cheese and parsley.

  4. 4.Preheat oven to 400 degrees.

  5. 5.To assemble, spread 1/2 cup of marinara sauce in the bottom of a 9x13 inch baking dish. Arrange 4 noodles lengthwise over sauce. Spread with one half of the ricotta cheese mixture. Spread half of the meat sauce on top of the cheese mixture. Top with a 1 cup of mozzarella cheese and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

  6. 6.Bake in preheated oven for 40 minutes. Remove foil, and bake an additional 30 minutes. Cool for 15 minutes before serving.
