Recipe Ingredients for Mikey's Cornbread

1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg, lightly beaten
1 cup fat-free sour cream
2/3 cup skim milk
1/4 cup icbinb lite, melted

Recipe Directions for Mikey's Cornbread

  1. In one bowl, combine the flour, cornmeal, sugar, baking powder, baking soda and salt. In a separate, larger bowl combine the egg, sour cream, milk and butter. Stir in dry ingredients just until moistened.

  2. Pour into a greased 8-in. square baking dish. Bake at 400 degrees F for 30 minutes or until a toothpick inserted near the center comes out clean. Serve warm.
