Recipe Ingredients for Mike's Carrot Cake #2

1 1/2 cup (198 grams) Gold Medal Whole Wheat Flour
1/2 cup, (90 grams) packed Sugars, Brown
1 1/2 tsp Pure Baking Soda
1 1/2 tsp Baking Powder
1 1/2 tsp Cinnamon, Ground
1/4 tsp Nutmeg, Ground
2 large Egg, Whole
3 carrot (7-1/2") (2 1/4 cups, 240 grams) grated Carrots
4 tbsp (1/4 cup) Vegetable Oil
1/4 cup (8 fl oz) Yogurt, Plain, Whole Milk, 8 Grams Protein Per 8 Ounce
4 tbsp softened Butter
4 oz softened Cream Cheese
8 oz Powdered Sugar
1/2 tsp Vanilla Extract

Recipe Directions for Mike's Carrot Cake #2

  1. Cake-

  2. Preheat oven to 350F

  3. Lightly grease an 8" square baking pan.

  4. In a large mixing bowl combine flour, sugar, baking soda, baking powder, cinnamon, and nutmeg.

  5. In a separate bowl whisk eggs, grated carrots, oil, and yogurt together.

  6. Add wet ingredients to dry ingredients in the large mixing bowl and mix well.

  7. Spoon batter into the prepared baking pan and bake 35 to 50 minutes or until a toothpick inserted in the center comes out clean.

  8. Frosting-

  9. In a mixing bowl cream together butter and cream cheese.

  10. Add sugar and vanilla and mix well.

  11. Apply frosting to cooled cake.
