1/4 cup Sugars, Granulated
0.38 tsp Nutmeg, Ground
0.38 tsp Cinnamon, Ground
1/4 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 cup Gold Medal Whole Wheat Flour
0.67 cup Shortening, Multipurpose, Soybean (Hydrogenated) And Palm (Hydrogenated)
27 oz Apples
4 oz Water

Recipe Directions for Mike's Apple Pie, no salt added #2

  1. In a medium size bowl mix together 1/4 cup sugar, 1/4 cup general purpose unbleached flour, 3/8 tsp. nutmeg, and 3/8 tsp. cinnamon.

  2. In a medium size bowl mix together 1 cup general purpose unbleached flour and 1 cup whole wheat flour.

  3. Peel, core, and slice apples to get 27 oz of sliced apples.

  4. Preheat oven to 425 degree F.

  5. In a large bowl mix the sliced apples with the sugar, flour, nutmeg, and cinnamon mixture.

  6. Prepare the pie crust by cutting 1/2 cup of vegetable shortening into the general purpose unbleached flour and whole wheat flour mixture.

  7. Mix in cold water 1 Tbsp. at a time with the flour shortening mixture. Use just enough cold water to get a dough ball to form. Up to 6 Tbsp. may be required.

  8. Divide the dough ball roughly 2/3 and 1/3 into 2 balls. Roll out the 2/3 dough ball and place in the bottom of a 10" pie pan. Trim off the excess dough and combine with the 1/3 dough ball.

  9. Place the apple and spice mixture in the bottom pie shell.

  10. Roll out the remaining dough and use for the pie top crust. Trim edges and crimp the top and bottom dough together to prevent the filling from leaking out during baking.

  11. Cut 2 or 3 slits in the top of the pie crust to allow the steam to vent. Cover pie crust edge with aluminum foil to prevent excess browning.

  12. Bake in a 425 degree F oven with foil on for 25 minutes then remove foil and bake for 15 minutes. Remove from oven and allow to cool on a cooling rack.
