Mighty muffins with applesauce substituted for the melted butter.

Recipe Ingredients for Mighty Muffins w/Applesauce

1 1/2 c. All-Bran
1 c. 2% milk
1 egg, beaten
1/3 c. molasses
1/4 c. applesauce
1 c. whole wheat flour
2 tbsp. wheat germ, toasted
2 tsp. baking powder
1/2 c. raisins
1/2 c. pecans, chopped

Recipe Directions for Mighty Muffins w/Applesauce

Combine bran and milk. Let stand 3 minutes. Add egg, molasses, applesauce - set aside. Combine dry ingredients. Make a well in the dry ingredients and add bran mixture. Fold in raisins and nuts. Pour into greased muffin tins. Bake at 400 for 20-25 minutes.
