Mighty Minestrone Recipe

Minestrone is a classic and delicious one-pot meal. This recipe is no exception. With a combination of winter and summer vegetables, this recipe is sure to satisfy. Add a little Italian sausage for a extra boost of protein and flavor!

Recipe Ingredients for Mighty Minestrone

1 T olive oil
1 medium onion, diced
2 stalks celery, diced
2 carrots, diced
1 Poblano Pepper, diced
1 yellow squash, cubed
1 zucchini, cubed
4 cloves garlic, minced
15 oz diced tomatoes, petite
10 oz spinach, thawed and drained
1 c green beans, Italian
15 oz cannellini beans
54 oz low sodium vegetable broth
1 tsp Italian seasoning
1/2 tsp parsley
1/2 tsp black pepper
3/4 c orzo

Recipe Directions for Mighty Minestrone

  1. Heat a large stock pot or dutch-oven on Med High heat for about two minutes or until the pot is hot.

  2. Add oil.

  3. Once olive oil moves easily in the pot, add the diced onion, celery, carrot, pepper and the cubed zucchini and squash.

  4. Sautée for about five minutes until the vegetables are softened.

  5. Add garlic and continue to sautée until aromatic.

  6. Add Italian green beans, tomatoes, spinach and beans. There should be enough nature liquid from the vegetables at this point to boil. If not, add enough stock to keep the vegetable submerged.

  7. Boil vegetables for 5 minutes and then add (the remainder) of the stock and seasonings. This is also a good time to cook the orzo in a separately until al dente.

  8. When orzo if cooked to liking add to soup. At this point the soup is ready to serve. And it's even better the next day.

  9. If you're adding Italian sausage, cook the sausage first, drain browned sausage and use the left over drippings to replace the olive oil. Add the cooked sausage with the beans.
