Tex-Mex scramble of eggs, tortilla and assorted savory ingredients. Originally developed as a way to use up leftovers.

Recipe Ingredients for Migas Scramble

4 eggs
1 tbs water
1 tbs salsa
1 tbs butter
1 tbs low-sodium chicken broth
2 tortillas
1/4 onion, chopped
2 tbs green chiles, finely chopped
1 tomato, seeds & pulp removed, chopped
1 avocado, diced & sprinkled with lemon juice
2 tsp cilantro, minced
2/3 c Monterey Jack cheese, shredded

Recipe Directions for Migas Scramble

  1. Lightly beat together eggs, water & salsa, set aside.

  2. Warm butter and broth in heavy skillet; add the tortilla pieces, saute until softened. Add the chopped onion and saute until transparent. Stir in chiles.

  3. Pour egg mixture into the skillet and "scramble" until eggs are done. Remove skillet from heat and sprinkle tomato, avocado, cilantro and cheese into the eggs, stirring well.

  4. Serve at once. Garnish with additional salsa or sour cream.
