Recipe Ingredients for Migas

1 white corn tortilla
3 tbs. egg white
1 large egg
2 tbs. low fat cheese
2 tbs. ro-tel
2 tbs. onion
1 tsp. olive oil

Recipe Directions for Migas

  1. Heat non-stick pan with olive oil over medium heat.

  2. Saute onions and corn tortillas torn into small pieces.

  3. Once the tortial begins to crisp. Add egg white and egg which have been beaten together. Stir to cook eggs slightly, then add ro-tel, add cheese.
