Adapted from recipe printed on package of Mission White Corn Tortillas

Recipe Ingredients for Migas

3 corn tortillas, cut in strips
1 tsp canola oil
1/3 cup onion, diced
1 jalapeno pepper, raw, diced
1 tomato, diced
2 tbsps cilantro, fresh, chopped
3 eggs, beaten
1/2 cup shredded Monterey Jack cheese

Recipe Directions for Migas

  1. Fry tortilla strips in oil until lightly golden but not crisp.

  2. Add onions and jalapenos and saute for 2 minutes.

  3. Stir in diced tomato and cilantro and cook for 2 more minutes.

  4. Add the beaten eggs and cook until the eggs are almost set, stirring occasionally.

  5. Spread cheese on top of the eggs and cover pan.

  6. Cook until the cheese is melted.

  7. Serve with salsa.
