Recipe Ingredients for Migas

1 small onion
1 small red bell pepper
1 small green bell pepper
2 roma tomatoes
1 jalapeno pepper
6 large eggs
1 tablespoon half-and-half
1 salt and pepper to taste
2 corn tortillas
1 tablespoon canola oil
2 teaspoons butter
1 cup Monterey Jack cheese

Recipe Directions for Migas

  1. Chop onion, bell peppers, tomatoes, and jalopeno.

  2. In a bowl, light beat eggs and half-and-half with salt and pepper and set aside.

  3. In a small skillet, fry corn tortillas in canola oil just until crisp. Drain on a papertowel and then roughly chop them. Set them aside.

  4. I a large skillet, pour canola oil from small skillet and add butter over medium-high heat. Add onion and bell peppers and cook until brown but not soft. Add tomatoes and cook for 1 minute. Add jalapeno and corn tortillas and mix together. Lower heat to low. Once skillet has cooled a little, add eggs and cook slowly just lightly turning them with a spatula and not stirring them. When the eggs are cooked add cheese and taste to see if more salt and pepper is needed.
