Mexican scrambled eggs (made with one egg and one egg white).

Recipe Ingredients for Migas

1/2 tbsp canola oil
1 large egg
1 egg white
30 grams corn tortilla
2 tbsp jalapeno peppers, canned
1/8 tsp salt
2 tbsp shredded cheddar cheese
2 tbsp salsa

Recipe Directions for Migas

  1. Heat oil in pan over medium-low heat. Cut tortilla into bite-sized pieces, then add to pan. Fry tortillas until lightly browned and slightly crisp.

  2. While tortillas are cooking, whisk egg, egg white, and salt. Add jalapenos.

  3. When tortillas are ready, add egg mixture to pan and stir to scramble eggs.

  4. When eggs are almost done cooking, add cheese and salsa. Continue cooking just until cheese is melted and salsa heated through.
