Cheesey corn torilla heaven! Add your own flare to it by adding hot peppers, onion or garlic. This recipe is an excellent base for a cheesey tortilla soup. Experiment! This is one of the first dishes my mother taught me.

Recipe Ingredients for Migas de Queso

6 corn tortillas
2 tablespoons olive oil
6 slices Cheese, American, Kraft Singles
1/2 cup ketchup
1/2 cup 1% milk

Recipe Directions for Migas de Queso

  1. In hot skillet, add olive oil

  2. Break tortillas into small pieces

  3. Fry tortillas until hard (some may remain soft)

  4. remove tortillas from skillet

  5. Add milk, ketchup & cheese (may add more milk, cheese or ketchup to suit your taste)

  6. When combined & cheese has melted, add tortilla chips

  7. Smother chips with cheese sauce

  8. Remove from heat

  9. Place in 4 serving bowls & eat
