This is a basic staple made through out much of the southwest. It is also known as Chilaquiles. Usually people add diced white onions and diced fresh jalapeno peppers, diced tomatos, the possibilities are endless. This is the basic recipe that I use for the kids because they don't like onions or tomatos in their eggs. It is quite filling, and has a lot of protein to help you through a busy day.

Recipe Ingredients for Migas (Mee - gas)

4 corn tortillas
2 tbsp canola oil
4 eggs
1 tbsp fat free milk
1 tsp pepper
1/2 tsp salt

Recipe Directions for Migas (Mee - gas)

  1. Tear or cut tortillas into small pieces.

  2. In a cup or bowl beat together eggs, milk, pepper, and salt, set aside.

  3. He oil in a skillet, add tortilla pieces.

  4. Sautee tortillas to desired crispiness (I like em really crispy).

  5. Add egg mixture.

  6. Cook until done.
