Recipe Ingredients for Midget's Omelet

3/4 c egg substitute
1/8 c red onion
1/8 c red pepper
1/4 c shredded zucchini
1/4 c chopped black forest ham
2 tbls shredded mexican blend cheese
1 tsp extra virgin olive oil

Recipe Directions for Midget's Omelet

  1. Saute

  2. red onion, red pepper, shredded zucchini and black forest ham in oil.

  3. Sprinkle ingredients over egg substitute.

  4. Add cheese. Fold over and cook until done.
