Recipe Ingredients for Middle Eastern Stew of Chickpeas, Potatoes and Carrots

1 1/2 c chickpeas, rinsed and drained
3 T olive oil
2 T onions, finely chopped
2 garlic cloves, peeled and finely chopped
3/4 lb potatoes, cut into 1/2 by 1-inch chunks
1 medium carrot, cut into 1/4-inch slices
4 small tomatoes, canned plum plus 1 cup liquid from the can
1 1/2 tsp salt
1/2 tsp dried thyme
1/2 tsp sugar
3 T parsley, finely chopped

Recipe Directions for Middle Eastern Stew of Chickpeas, Potatoes and Carrots

  1. Heat oil in a medium pan over medium-high heat. Add the onions and stir and fry until the onions are brown around the edges.

  2. Add the garlic and stir for 30 seconds.

  3. Put the potatoes, carrots, chickpeas, tomatoes, tomato liquid, salt, thyme, and 1 cup water. If the tomatoes are very tart, add the sugar to taste.

  4. Bring to a boil. Turn heat down to low, cover, and cook gently for 45 minutes.

  5. Sprinkle parsley over the top before serving. Serve hot.
