1/2 cup ReaLemon juice
1/2 teaspoon ground cumin
2 tablespoons extra virgin olive oil
2 scallions
2 cups sliced cucumber
1 pint cherry tomatoes
2 cups cooked chickpeas
1/2 cup chopped flat-leaf parsley
1/2 cup chopped mint
1 tablespoon reduced fat feta

Recipe Directions for Middle Eastern Salad

In a large salad bowl, whisk together lemon juice, salt, cumin, and oil. Add scallions, cucumbers, cherry tomatoes, chickpeas, parsley, and mint. Toss to combine.
