Great middle eastern without meat

Recipe Ingredients for Middle Eastern Salad of my Favorite Things

3 cups water
1 cup spelt (kamut)
1/2 teaspoon salt
16 Kalamata olives
1/3 cup red onion
1 1/4 cup feta cheese
1 small green pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
4 teaspoons olive oil
2 teaspoon balsamic vinegar

Recipe Directions for Middle Eastern Salad of my Favorite Things

  1. Cook kamut 1 1/2 hours

  2. Drain kamut

  3. place in large bowl

  4. mix all ingredients

  5. salt and pepper to taste
