Recipe Ingredients for Middle Eastern Red Lentil Soup

1 tbsp olive oil
1 med onion, finely chopped
2 med carrots, finely chopped
1 c dried red lentils
2 tbsp tomato paste
1/2 tsp ground cumin
1/2 tsp ground red pepper
5 c reduced-sodium chicken broth

Recipe Directions for Middle Eastern Red Lentil Soup

  1. 1. Heat oil in medium soup pot over medium-high heat. Add onion, carrots, and celery and sauté about 3 minutes or until vegetables begin to soften.

  2. 2. Stir in lentils, tomato paste, cumin, pepper, and broth. Raise heat to high and bring to a boil. Reduce heat and simmer, uncovered, stirring occasionally, 30 minutes or until lentils are soft and soup is thick. Salt to taste.

  3. 3. Place 1 cup of soup in food processor or blender. Puree until smooth. Combine with soup in pot and heat through.

  4. 4. Ladle into 4 preheated bowls and top each with 1 tablespoon of the yogurt.
