Traditionally served as a dip for pita bread, hummos makes a hearty sandwich when vegetables are added. This version of hummos takes its flavor from Oriental sesame oil in place of tahini (a sesame seed paste), found in the Oriental section of large supermarkets.

Recipe Ingredients for Middle Eastern Hummos Pitas

1 clove garlic
16 oz garbanzo beans
3 tbsp extra virgin olive oil
1 1/2 tbsp lemon juice, fresh
1 tsp Oriental sesame oil
1/4 tsp salt
2 pitas, halved crosswise rounds
4 tomato slices
8 g cucumber, thinly sliced
1/4 cup radishes, thinly sliced

Recipe Directions for Middle Eastern Hummos Pitas

Peel garlic and place in a food processor fitted with the steel blade. Process until minced. Drain beans well, add to food processor, and process until beans are finely chopped. With the motor till running, add olive oil and lemon juice until mixture as almost smooth. Add sesame oil and salt and process and spread hummos evenly onto one side of each pocket. Add sliced tomato, cucumber, and radishes.
