my take on a cooking light recipe of middle eastern style rice. (i was missing the majority of the spices the real recipe called for, so I substituted with whatever I had on hand).

Recipe Ingredients for middle easter rice w/garbanzos and turkey

3 tbls olive oil
1/2 onion, chopped
1 tsp garlic, minced
1 tsp cumin, ground
1 tsp basil, dried
1/2 tsp cayenne pepper
3/4 cup rice, basmati
2 cups chicken broth
12 oz ground turkey
1 1/2 cups garbanzo beans, drained and rinsed
1 1/2 cups black beans, drained and rinsed

Recipe Directions for middle easter rice w/garbanzos and turkey

  1. over medium heat, add olive oil, garlic and onion to pan and cook for 2 minutes

  2. add cayenne, dried basil and cumin to pan and cook for another 2 minutes

  3. add rice to pan mixture and cook for 5 minutes.

  4. add the chicken stock, bring to a boil, reduce heat and cover on low for 15 minutes

  5. in a separate pan, brown the ground turkey and sprinkle salt/pepper to taste

  6. add the cooked ground turkey and garbanzo and black beans to rice and mix it all up

  7. serve with pitas, pita pockets or pita chips and hummus.
