This is normal, everyday chicken salad. Nothing fancy, just the basics...but it's really good and low fat!

Recipe Ingredients for Mid-west chicken Salad

1 chicken breast
2 celery stalks
2 hard boiled eggs
1 tbsp pickle relish
1 tbsp Miracle Whip
1 tbsp sugar
1/2 tsp vinegar
1/4 tsp salt
1/3 tsp pepper

Recipe Directions for Mid-west chicken Salad

  1. Use one can of cooked chicken (or boil one chicken breast for one hour with 3 broth cubes, until it's tender)

  2. Hard boil 2 eggs

  3. While eggs and chicken are boiling, cut up 2 stalks of celery.

  4. Mix together Celery, Miracle Whip, Pickle relish, sugar, vinegar, salt and pepper. Taste it...if too sour add more sugar, if to sweet add a little more vinegar (be careful with the vinegar!)

  5. Cut up chicken and eggs. Then add to mixture. Chill for one hour before eating.

  6. Best on toast.
