Easy recipe for twice-baked potatoes using the microwave. Ready in about 20 minutes.

Recipe Ingredients for Microwave Twice-Baked Potatoes

1 potato
2 tbsp butter
1/4 cup light sour cream
1/4 tsp salt
1 dash of pepper
1 dash of paprika

Recipe Directions for Microwave Twice-Baked Potatoes

  1. Prick potato and microwave for 12-14 minutes.

  2. Remove from microwave and cut a rectangular piece of the skin off of the top.

  3. Using a spoon, remove the inner flesh of the potato and transfer to a bowl. Be sure to leave the shell intact.

  4. Add butter, sour cream, salt, and pepper to potato flesh in bowl. Mash with a fork until well mixed.

  5. Spoon potato mixture back into potato shell, mounding it on top if necessary.

  6. Microwave potato for another 3-4 minutes.

  7. Garnish with a dash of paprika on top and serve!
